A hard, unpasteurised, West Country, cheddar cheese.
A magnificent farmhouse cheddar made by our friend Tom Calver and his team at Westcombe. Tom uses the farm's own unpasteurised milk which is pumped into the vats still warm from the cows to produce a cheddar that is complex and lingering, it is sometimes known as "five mile cheddar" because you are still tasting it five miles down the road!
There are notes of caramel, hazelnut and lemon. The cheese is traditionally made, even using one of the last peg mills left in the country to mill the curd. We usually sell our Westcombe at about 18 months old.
