Tete de Moine is a hard, unpasteurised, Swiss, cows cheese.
Tete de Moine is a small, cylindrical cheese weighing approx. 800 gm. Made in the Jura mountains where the cows feast on fragrant and aromatic grasses and herbs.
During the winter they feed on fragrant hay made from the same pastures. It is this diet that gives the cheese its distinctive flavour and aroma. Tete de Moine is not sliced like other cheeses, it is pared into delicate florets using a device called a girolle. This method allows more air to permeate the cheese which helps to develop its unique flavour. Looks very pretty on a cheese board.
