Stinking Bishop is an English, soft, washed rind, pasteurised, vegetarian cows milk cheese.

This infamous cheese has been made by Charles Martell, his family and his fabulous Old Gloucester cows at Laurel Farm in Dymock, Gloucestershire since 1972.

It's pungent aroma develops due to the rind being washed in perry which also turns the cheese a pretty apricot colour with pink flushes.  It is a full fat semi soft cheese, becoming gooier (and stinkier) with age.  The cheese is encircled with a band of beech wood. It tastes infinitely better than it smells!
