Reblochon is a soft, French, unpasteurised, washed rind cheese.
There is an interesting story behind this cheese.... Historically farmers were taxed as per their milk production so when the taxman was coming they would only partially milk their cows. Once the visit was over, and the milk measured, the farmers would get the rest of the cows' milk which was much creamier and richer. This is what was used to make Reblochon.
It is an Alpine cheese from the Haut-Savoie region, the rind is washed with whey leaving a pretty cheese that looks like a little cake. It is rich, creamy and nutty and the flavour is intensified as it matures in the region's mountain caves. Fabulous for melting, it is the key ingredient in Tartiflette, it pairs well with Beaujolais.
