Morbier is a semi hard, French, unpasteurised, cows cheese.

A mountain cheese from the Franche-Comté region, Morbier is soft and springy dotted with little holes and has a layer of ash in the centre.  

The ash was originally what separated the evening and morning milks but is now purely decorative, although some say it aids digestion. The rind is quite leathery and is washed with brine and brushed throughout the maturing process.  The flavour of Morbier is mild and milky becoming stronger and more tangy with age.
