Gjetost is a hard, Norwegian, sweet, vegetarian, cows whey cheese.
This Norwegian cheese is certainly unique, it is made by boiling the left-over whey from the two milks until the lactose caramelises, giving Gjetost it's fudgy appearance.
We always describe it to customers as a bit like a cheesy Caramac! While most definitely not for everyone (including ourselves) it has quite a cult following.
A customer has kindly written to us with the following useful information:
"I come from a Scandinavian background and my relatives in South Africa (where I am originally from) used to use it - in a dish of chicken, where they used the cheese in the gravy! I can remember my aunt making a HUGE pot of chicken pieces, browned in butter, then using the juices and chicken stock etc to make a really unctuous, very rich sauce with butter cream (don’t be shy with either) and the Gjetost. It is awesome - and I don’t like it as a cheese on its own either. But in this thick, very rich sauce, it is amazing! "
